Still no meat

Man, that title sounds bad- lol

Funny thing is that I don't miss poultry and beef and pork etc...

I feel better physically, not as tired all the time, even feel a 'mental clarity' that I hadn't had in the months prior to the change.

Yes, I am still eating fish and aquatics, but that will change once I am better aclimated to the BIG change.

I haven't had time to do much cooking or research on yummy recipes yet.

A week.

It's been a while without any 'walking meat'.
I haven't been able to give up the fish. It is lent, yanno?

Ron says he has lost 7 lbs in the past week. He's still eating like a pig, but because there's no meat in the diet for the most part, it's been easy for him to drop weight. I won't tell you about our $$$ a week grocery bill because I have been buying raw foods out the ying-yang. I really wish I could grow my own, but it's not possible with the dogs. The side yard is the only place that really gets any sun, and it's way too dry, even with watering. I have strawberries planted there.

My parents also think I am nuts. They DID eat a mostly vegetarian Easter lunch and dinner at my house. If they didn't bring the honey-baked ham, they wouldn't have had any meat. : ) They brought the ham. They eat a terrible diet, with meat at almost every meal. My father has a McD coffee and a sandwich almost every day. Lunch meat with bread for lunch and whatever they do for 'take out' for dinner. I tried to get them to take left-overs when they went home, but nope... no veggies for them- lol.

I have gained Ron's 7 lbs. Does anyone have a reason for me to stop eating chocolate? Do they beat the chocolate beans? Do they keep them housed in horrible conditions? Ugh... there has to be a reason for me to morally stop eating chocolate.... other than my pants not fitting... lol

Dessert

I had the MOST AMAZING dessert today. It was day two of the pandemic vaccine production discussions at Case/Severance Hall.
This dessert was the most chocolatey thing ever.
I'll start at the bottom. There was a crust of chocolate crumbs of some sort with crispy small pieces of what was like the insides of a butterfinger and toffee mixed together. Then there was fudge chocolate filling. It was like eating fudge frosting right out of the betty crocker can. It wasn't fake-yucky tasting like they usually are. Then there was a swirl of fudge frosting on top.
Amazing.
Now, think of this- only about half the people showed up for lunch. Okay, maybe less than half. There were desserts at every place setting calling me. Uneaten. I left them there. I thought about sneaking one into a napkin or something and eating it tonight, but they had cloth napkins. It would have been a teeny bit obvious.
Our luncheon table was all weirdos. There were 5 of us from our Chemical engineering class there today. We ate together. Two were totally vegetarians. There was me who eats fish. There was a girl that was fasting today (she fasts every Tuesday.) and there was the chinese woman who sat in the middle "I eat EVERYTHING" she said. Then went on to comment that we're the vegg heads and she is the skinniest one of us all. I almost ate her dessert to piss her off.

Day 2

I had a bit of salmon today. Ugh.
Peer pressure.
but a catered luncheon at Severance Hall- it was not hard to bend a bit. Besided, I have a hard time thinking of fish as having meat... it's more like ummm... other stuff. I don't know. I am rationalizing.
I also had a ton of pastries. Had to stay awake somehow during the seminars!
I promise to exercise tonight when I get home... either walk the dogs or go for a bike ride...

It was a good dinner with a really big salad of fresh romaine, with some spinach and balsamic vinigrette dressing and everything I had in the fridge to top it off. The hubby and kid ate tuna as a side. Ron has been acting as if I am planning to slowly starve him do death. Geez. He keeps saying *I'm not going to be a vegetarian*.
To set the record straight, I only mentioned that I wanted 2-3 meat-free meals per week.
Men.

I got weak while waiting for my favorite show, Grey's Anatomy- since they canceled Desperate Housewives tonight- and had too many carbs. Thanks to Joanna's baking.
But, heck- there's no meat in vanilla cake and frosting!

By the way- what's this about a repeat of GA and then next week it's not on?!?! THey reel us in and then cut off our fins. We're stuck.
I only allow myself fru-froo 2 hours of TV per week. DH and GA are it.
I'll pout all week and dream of Denny.

Day 1

Wow. Here it is. I am cutting out meats. Wow. My whole life has revolved around beef. Veggies were only in the sauce between the spaghetti noodles and the meatballs.

Joanna doesn't like meat. I am doing this for our health and to support her feelings on killing animals for food. Yes, she's 4 and may grow out of it... but I will never make anyone else not eat meat around me. Everyone chooses how to nourish their bodies. This is how I will nourish mine.
We're starting with baby steps. Today, no meat with restricted carbs.

For breakfast, we made omelets. Joanna got plain eggs, I had an onion omlette, and Ron got onion and tri-colored pepper omlette.

Right now, there is a quiche in the oven:

1 pie crust
4 cloves garlic (finely minced and sauteed.)
1/2 a stew onion (minced very fine to hide them from J and sauteed with the garlic)
1/2 C shredded cheddar cheese
1 tomato (cubed)
5+ eggs
broccoli florettes to cover the bottom of the dish
1/2 tsp rosemary leaves
salt and pepper splashes

oven at 350 for 40-50 mins.
Cooking now. Will let you know if it's palatable for the reluctant vegetarians in the house.
